How to make Puri and Potato Curry

This is a good combination that everyone in my family like to have. Puries are good and easy to make and this simple curry is worth trying.

Ingredients:

For Puri:

  • Whole wheat flour - 1cup
  • All purpose flour    - 1/4 cup
  • Semolina , roasted (Rava)- 1/4 cup
  • Salt                       - as for taste
  • Oil                        - for frying
  • Water                   - for kneading
For the curry:

  • Potato (boiled)      - 2 ( medium)
  • Ginger(chopped)  - 1 teaspoon
  • Green chill            - 1 tablespoon
  • Shallots (kochulli) - 1 tablespoon (optional)
  • Mustard seed       -1 teaspoon
  • Curry leaves         -as needed 
  • Salt                      - as needed
  • Turmeric              - A pinch or 1/4 teaspoon
  • Oil                       - as needed for tempering
  • Water                  -1/4 cup
Preparation:
Puri :
  1. In a bowl add all the mixture for puri other than oil and knead well to get a good dough keep aside for ten minutes or so.
  2. After 10 minutes, ball the dough each ball of the size of a lemon and brush each with oil.
  3. Roll them out using a rolling pin to circles of diameter 4".
  4. Deep fry them  in very hot oil in a wok rotating them within the wok using a spatula, this helps it to puff up.
  5.  Once puffed up, turn them and take it and let them drain excess oil.
  6. Done!!
For the curry:
  1. Heat oil in a pan and add the mustard seeds and let the mustard burst.
  2. When that's done , add ginger, shallots and chilies and saute.
  3. When they get cooked, add turmeric and potatoes and stir for a short time.
  4. Add salt and water and let it cook until mushy, mash up any huge lumps.
  5. Done!! Enjoy with your puri!!

How to make Uppuma (Uppumavu)

      Uppuma is a good and healthy breakfast, common in India especially in the south. It is simple but delicious. Here goes the recipe.

Ingredients:

  • Semolina (Rava) , roasted  - 1 cup
  • Mustard seeds     - 1 teaspoon
  • Ginger (chopped) - 1 teaspoon
  • Green chillies (Chopped)- 1 tablespoon
  • Carrots (diced)    - 1/2 cup
  • Beans ( chopped) - 1/2 cup
  • Potatoes (diced)   - 1/2 cup
  • Salt                      - As your taste
  • Water                   - 1 cup
Ghee (Clarified Butter) - 2 tablespoon or as required
Preparation:


  1. Heat a wok  and pour ghee and when the ghee is hot, add the mustard seed and wait until they burst.
  2. Then add the ginger and green chilies and saute until they smell cooked.
  3. Add the potatoes and let them cook.
  4. When the potatoes have gone soft and cooked, add carrots and beans and wait for them to get cooked and when they are almost done, add salt and continue to cook .
  5. In another wok, add ghee, water and salt, let them boil.
  6. Reduce the heat and add the semolina slowly to the water , stirring.
  7. When the water evaporates and becomes a little dry, put in the vegetables prepared before.
  8. Stir to mix all together.
  9. Vola!! you are done! have them warm!
